We’re thrilled to finally share some of our most treasured family recipes, starting with the one that never gets old — Nona’s Pasta Soup (our version). It’s warm, nostalgic, and lovingly served every single Sunday night at our table in Gilgil. Trust us, we’ve tried swapping it out once or twice… never again.
This is food the way we love it — humble, hearty, and full of soul. Let’s cook!
Nona’s Pasta Soup
For 6 relaxed people
Ingredients
- 3 cups pasta (the smallest ones you have)
- 1 onion
- 3 tomatoes
- 2 cloves garlic
- 3 sticks of celery
- 2 carrots
- 1 handful mixed herbs (rosemary, thyme, oregano)
- 1 chicken stock cube in ½ litre of water
- To serve – Grated Parmesan (and maybe a little grated cheddar or Gouda).
Steps to make
- Roughly chop all the veg
- Boil everything apart from the pasta for 1 hour in a sizeable saucepan.
- Sieve veg out
- Blend ¼ of the veg
- Boil pasta in leftover water until cooked.
- Add the blended veg (and more water if needed)
- Serve with grated Parmesan… Happiness in a bowl!
