The Safari Company Artichokes and Butter

Makes 4 servings

Easiest and quite impressive starter or a whole supper for those with a smaller appetite.

Ingredients

  • 4 artichokes
  • 4 generously heaped tbsp butter
  • A pinch of salt … or 4.

Steps to Make

  1. Boil artichokes until you can pull the leaves off with ease (usually about 1 hr).
  2. When nearly ready, melt 1 tbsp butter in each of the 4 ramekin dishes in a microwave, until melted.
  3. Add a pinch of salt to each ramekin dish.

How to Eat it

  • To eat – Pull the leaves out 1 at a time, dip the paler bit of the leaf in the butter and scrape it off with your teeth, then chuck the rest of the leaf in the empty bowl.
  • When all of the leaves are gone, cut out the little central area of hair if it’s prickly (young ones aren’t prickly and can be eaten). Chop up the base and the stem and pop it in the remaining butter .. and yum!

Fun fact

Artichokes are low in calories, with only about 60 calories per medium artichoke, but they are high in fibre, which aids in digestion and helps maintain a healthy gut.
